BEEF BROTH

As winter lingers there's one crucial solution to all your problems – a good bone broth! 🍲

In general, soups are very important in Chinese medicine. Especially when consumed in the morning, they serve as a robust kickstart to our day. 💫 They help build up Yang, harmonize Yin and support our digestive well-being. In order to get all these benefits, learn how to make "the right" bone broth.


Ingredients:

  • beef rib with bones

  • onion

  • garlic

  • a few pieces of: allspice, juniper, black pepper

  • 2 tbsp of apple vinegar

  • root vegetables


  • adlay /Job's tears (or other cereal)

  • tremella


Pour water into a large pot and add all the ingredients, cover with a lid, bring to boil, and then reduce the heat to low and let it cook for at least 6 hours. After cooking, strain so that you are left with a clear broth. You can let the broth cool and then collect all the fat (it will solidify on the surface in the fridge). Throw away the other remaining ingredients, except for meat! Then add new vegetables according to your taste, adlay, tremella and cook until soft. Serve with a fried or poached egg.

The broth will last up to a week in the fridge. Use it to drink, make another soup out of it, or use it for cooking.
