Looking for something to have with your favourite dips, spreads or hummus?
Ingredients:
2 cups zucchini grated
2 cups of any flour (I used rice flour)
2 teaspoons baking powder
1 teaspoon dried herbs (oregano, dill, basil) or a handful of fresh herbs
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon black pepper
¼ cup of any milk
2 large eggs
3-4 tbsp nutritional yeast (or 1 cup grated cheese)
2-3 pcs sun-dried tomatoes chopped
2-3 tbsp sunflower seeds
Great the zucchini and let it drip in a strainer (squeeze it with your hands to let most of the liquid out). Preheat the oven to 180℃.
In a large mixing bowl, whisk together the milk and eggs. Add the zucchini, and all the other ingredients and whisk to combine.
Transfer to the prepared bread pan and bake for 45-50 minutes, or until a thin knife inserted into the center comes out clean.
Allow the bread to cool for 5-10 minutes in the pan before transferring it to a cooling rack. Serve warm or allow it to cool completely.
