Beetroot "hummus"

I simply love this fake “hummus” made from beetroot and cashews. And also its crazy colour!


Ingredients:

🩷 cooked beetroot 200-300g

🩷 cashews 60g

🩷 tahini 3 tbsp

🩷 garlic 1-2 cloves

🩷 lemon juice 1 tbsp

🩷 olive oil 2 tbsp

🩷 salt and pepper


Soak the cashews in lukewarm water for 2 hours, then rinse and let dry for a couple minutes. Cut the beetroots in pieces, mix with all the other ingredients and blend until you get a smooth unified dip. Serve with crackers or baked veggies. 🩷
