Poppy seed roulade

Black poppy seeds have a lot of health benefits (and have nothing to do with opiates šŸ˜›). Similarly to black sesame, they will nourish our kidneys and also help digestion. This is an amazing gluten-free delicious roulade based on poppy seeds.Ā 


Ingredients:

  • 6 eggs

  • 6 tablespoons of sugar (can be also coconut sugar, panela, etc.)

  • 100 grams of ground poppy seeds

  • 300 grams of mascarpone cheese

  • 100 grams of whipping cream

  • pinch of lemon zest

  • vanillaĀ 


First, separate the whites from the yolks. Mix the yolks with sugar, lemon zest and vanilla to get a creamy texture, then add the poppy seeds.

Beat the egg whites until stiff and mix it very slowly and carefully into the yolk mixture.

Transfer the mass to a pan with baking paper and bake at 200 degrees for up to 13 mins (it will get slightly browned). Wait for it to cool down just a little bit - while still warm roll it (with the baking paper on!) into roulade and leave it to cool completely. Whip the mascarpone cheese first to soften it and then whip the cream separately and slowly add it into the mascarpone.

Unwrap the roulade, remove baking paper, spread with mascarpone cream and then wrap it tightly again. Put it in the fridge for a few hours, ideally overnight.
