These are the softest and best pumpkin cookies ever.
Ingredients:
6 tbsp pumpkin purée (85 g) from a baked butternut squash
4tbsp of honey or maple sirup
2tbsp
½ cup melted salted butter (make sure it’s melted)
1 ½ tsp vanilla
1 ½ cup flour
¼ tsp salt
¼ tsp baking powder
¼ tsp baking soda
1 ½ tsp cinnamon
¼ tsp nutmeg
¼ tsp cloves
½ tsp apple pie spice or pumpkin pie spice
½ cup and 2 tbsp semi-sweet chocolate chips
½ cup to 1 cup of chopped pecans or walnuts, depending on your preference
Mix together tall the ingredients above, the flour and cocoa powder at the end and chocolate chips and walnuts as the very last.
Bake in a preheated oven (180C) for 25-28 minutes or until a knife inserted into the center comes out clean.
