There is a way to add an earth element to this delicious brunch recipe. Just mix your polenta with a bit of pumpkin puree!
Ingredients:
pumpkin puree (smashed pumpkin previously baked)
water/milk
½ cup polenta
salt
dried tomatoes
oregano
parmesan or nutritional yeast
Cook the polenta according to instructions, adding tomatoes and oregano. At the end mix it with pumpkin and parmesan. Serve with a fried egg and a little salad.
