Pumpkin polenta with fried eggs

There is a way to add an earth element to this delicious brunch recipe. Just mix your polenta with a bit of pumpkin puree! 


Ingredients:

  • pumpkin puree (smashed pumpkin previously baked)

  • water/milk

  • ½ cup polenta

  • salt

  • dried tomatoes

  • oregano

  • parmesan or nutritional yeast


Cook the polenta according to instructions, adding tomatoes and oregano. At the end mix it with pumpkin and parmesan. Serve with a fried egg and a little salad.
