Ingredients:
1 large zucchini
2 cloves of garlic
cup cashew (natural)
fresh basil
olive oil
salt pepper
Soak the cashews in water for at least 12 hours (just put them in a cup so that the nuts are submerged). Grate the zucchini, add salt and let the water drain.
Fry the sliced garlic in olive oil, add the squeezed zucchini and fry until it changes its color a little (5-10 minutes). Add salt/pepper, cashews (without water!), fresh basil and blend with a stick blender.
